The obligatory salad post

Even though I swore up and down that I wouldn't jump on the "ItsJanuaryandnowIneedtolooseweight" bandwagon, I weighed myself last week.
& it wasn't pretty
So salads and cardio it is my friends!

I'm sharing my favorite salad recipe with you today because its so versatile and mostly because it's yummy. If any of you know me, you know I rarely get excited about veggies, especially spinach. So the fact that I could live on this salad should tell you something...

Spinach Salad dressing:

1/2 cup vegetable oil
1/3 cup apple cider vinegar
1/2 cup sugar depending on your preference
1 tsp. dry mustard
2 tbsp dry minced onion

Whisk and chill

Now the most popular version of this salad is
Mandarin Oranges
sliced almonds
white cheddar/munchie cheese *optional

But you could add almost anything to this salad. In the fall I made it with dried cranberries and honey crisp apples and it was just as good. You could even add grilled chicken to really make it a meal.

And a bonus tip...drizzle the dressing over crispy baked sweet potato fries!

I find that if you toss in a hard boiled egg, the protein in it will help you feel full longer.
